Francisca Chacón

Costa Rica Calle Lajas

honeycomb, kiwi, lychee, pear

Another offering from the Las Lajas micromill in the Sabanilla de Alajuela region of Central Valley, Costa Rica. The Chacón family owns and operates the mill, along with several surrounding farms, including Calle Lajas.

The Chacóns are innovators in coffee processing, especially honey and natural processes. This particular lot is a yellow honey.

In this honey process, the ripe beans are brought from the farm and are classified to obtain those that are 100% ripe, then they are de-pulped and immediately transferred to raised beds. During the first day periodic movements are made (3 to 4 times a day), with the aim of reducing the humidity of the coffee. This is an extremely fast drying process (7 days)

Cultivated at 1400-1600 m.a.s.l. and consisting of catuai and caturra varieties.
